INGREDIENTS:

Noodles:

  • 2 Eggs
  • 2 oz Cream Cheese, softened
  • 1/4 tsp Xanthan Gum
  • 1 Cup Shredded Mozzarella

Meat Filling:

  • 1 lb Ground Beef
  • .5 lb Ground Italian Pork Sausage
  • 2 Tbsp Olive Oil
  • 2 tsp Italian Seasonings
  • 12 oz Tomato Basil Spaghetti Sauce

White Sauce:

  • 2 Tbsp Butter
  • 1 Cup Heavy Whipping Cream or Half-and-Half
  • 1/2 Cup Grated Parmesan
  • 1/2 tsp Xanthan Gum
  • 1/4 tsp Pink Himalayan Salt
  • 1/4 tsp Pepper

Additional Ingredients:

  • 1 Cup Shredded Mozzarella

 

PREPARATION:

Noodles:

Preheat oven to 375°F.  Prepare a 10x13 baking pan with parchment.

Combine eggs, cream cheese & xanthan gum in a food processor.  Add mozzarella cheese & mix.

Pour onto parchment in baking pan & spread evenly to form a rectangle. Place in oven for 15 minutes. Cool & cut in thirds lengthwise, then in half.

Meat Filling:

Add olive oil & Italian seasonings to skillet. Add ground beef & Italian pork sausage. Brown meats over medium heat.

Add spaghetti sauce. Simmer until ready for use.

White Sauce:

Add Butter to saucepan and melt. Add cream or half-and-half & bring to a boil.

Slowly whisk in Xanthan Gum. Once Xanthan Gum is incorporated & mixture begins to thicken, add parmesan, salt, pepper & stir frequently. Once cheese is melting well, remove from heat.

Assembly:

Using an 8x8 dish, add thin layer of meat filling to bottom. Add layer of noodles, half of remaining meat filling, half of white sauce & half of mozzarella. Add last layer of noodles, meat filling, white sauce & mozzarella.

To Bake:

Preheat oven to 350°F.  Place dish with assembled lasagna in the oven and bake for 25 minutes.
